Saturday Morning Breakfast

I recently enjoyed a lovely Saturday morning breakfast made by my husband. It was so tasty and beautifully presented, I thought I’d take a break from reporting on the farm and share this delightful recipe with you!

Andy love’s making breakfast on the weekends, and he is very good at it! One of his favorite pastries to make are Popovers. It is a recipe he grew up with as his mom (Caroline) made them often. 

Caroline’s Popover Recipe

Preheat the oven to 450 degrees.

Ingredients:

  • Shortening for greasing the muffin tins

  • Two eggs at room temperature, beaten

  • One cup of milk

  • One tablespoon of cooking oil

  • One cup of all-purpose flour

  • ½ teaspoon of salt

Directions:

Grease six muffin tins with shortening, place the tin on a baking sheet and put it in the oven. In a mixing bowl combine eggs, milk, and oil; add the flour and salt. Beat the mixture until smooth. Remove heated tin from oven and fill the hot cups half full of the mixture; return to oven. Bake at 450 degrees for 20 minutes. Reduce the heat to 350 degrees and continue baking for an additional 15 to 20 minutes until very firm. If the Popovers brown too quickly, turn off the heat and finish baking in the cooling oven. Serve hot with butter (I prefer Irish butter) and jam.
