EASY LEMON CUCUMBER SALAD

Lemon Cucumber Salad

It’s been a while since I posted a recipe on the blog. As part of my “Prelude to a CSA” endeavor, I’ve been researching and trying out new recipes that are specific to the produce I’m growing in the Posh Market Garden. This lemon cucumber recipe is one that I tried out recently and it is AMAZING. Super light and refreshing and I highly recommend it. For any customers who buy Lemon cucumbers directly from Posh Market Garden, I include a copy of the recipe with their first purchase.

Ingredients:

  • 2-3 Lemon Cucumbers

  • 1 Small Red Onion

  • 3 Sprigs of Mint

  • ½ Cup Slivered Raw Almonds

  • 2 Tb White Wine Vinegar

  • ¼ Cup Olive Oil

Recipe

1.    Thinly slice Lemon Cucumbers and Red Onion. Layer in a serving dish. Sprinkle with fresh mint leaves and slivered almonds. 

2.    Mix Olive Oil and Vinegar with salt & pepper to taste. Drizzle over salad.

3.    Enjoy!

Try some of these Recipe Variations:

1.    Add blackberries or strawberries

2.    Dress with Dill and Lemon Juice

3.    Add some drops of fresh Pesto

4.    Don’t have almonds? Try with walnuts, pine nuts, pistachios, or cashews!

I’ve not tried any of these variations to date but they do sound good, and I did come across another recipe that combined the Lemon cucumbers with Pesto, I’ve just not tried it yet. But until I do…
