Favorite Recipes: Ravioli With Apples and Walnuts
This recipe also came out of the “Real Simple” October 2009 issue and is one of my go to recipes when I’m short on time but don’t want to serve something that is short on flavor!
The hands-on and total cooking time is about 20 minutes, and it serves four people.
Ingredients:
1 pound cheese ravioli (fresh or frozen)
2 tablespoons olive oil
½ cup walnuts, roughly chopped (you can further save time by buying the nuts prechopped in a 4 oz package usually found in the baking aisle of the grocery store)
1 crisp apple (such as Braeburn or Gala), cut into matchsticks. Leave the skin on as it adds a touch of color to the dish.
½ cup fresh flat-leaf parsley, chopped
Kosher salt and black pepper
¼ cup grated Parmesan cheese
Directions:
Cook the ravioli according to the package directions.
While the ravioli is cooking, heat the oil in a medium skillet over medium heat. Add the walnuts and cook, stirring often, until lightly toasted and fragrant, about 4 to 5 minutes.
Next add the apples, parsley and ½ teaspoon salt and ¼ teaspoon pepper and toss to combine. Spoon over the ravioli and sprinkle with the Parmesan. Per my girls’ request, I often serve this dish with a breadstick either homemade or store bought depending on the time I have available. Together with the taste, the colors and textures of this dish make for a visually pleasing culinary delight, perfect for both family and friends!
