Amazing Pizza Sauce
Over the years my family has developed a tradition of having pizza on Friday nights. In the beginning we would sometimes order the pizza but as time progressed, we started making our own pizza and now we hardly ever order out. Early on I made my own pizza dough, then I got lazy and bought dough from the grocery store, but I’d say over the last year, maybe two I’ve gone back to making my own dough. Now I use the Olive Oil dough recipe from The New Artisan Bread in Five Minutes a Day cookbook which I wrote about in an earlier blog post.
Our friends Laurie and David put us onto this amazing Pizza sauce recipe That came from the cookbook Binging with Babish by Andrew Rea. I think it was David who gave me the recipe as he makes the most amazing homemade pizza that I’ve ever tasted! Laurie and David also gave Andy the cookbook for a Christmas present last year. It’s an interesting cookbook with some very tasty as well as questionable recipes, 100 to be exact, recreated from your favorite movies and TV shows!
This recipe which is titled Pizza Sauce makes 3 ½ cups of sauce. It is a really simple recipe, but the favors are amazing on pizza. It also makes for tasty salsa on chips, or even for bread dipping!
Ingredients:
1 (28 oz) can of whole peeled tomatoes with their juices (I either substitute it for dices tomatoes and drain some of the juice or when it is summer, and my tomato crop has come in I will boil fresh tomatoes to get the skins off and use fresh tomatoes)
2 medium garlic cloves minced (here too I’ve taken to substituting the two cloves for two teaspoons of pre-minced garlic from a jar – because it’s easier and maybe I’m lazy)
1 teaspoon of kosher salt
1 teaspoon of dried oregano
½ teaspoon red pepper flakes
½ teaspoon dried basil
½ teaspoon sugar
In a food processor, combine the tomatoes and their juices, garlic, salt oregano, red pepper flakes, basil, and sugar. Process until smooth and set aside until ready to use. I’ve had it in the fridge for up to two weeks and it’s still good so 3 ½ cups can go a long way!
Then it’s time to figure out your pizza toppings, heat up your pizza stone and let the creativity begin!
