Carboy Winery: A Taste of Palisade in the Denver Metro Area

Recently Andy and I connected with our former neighbors Jen and Alex at Carboy Winery located in Littleton, Colorado. Their main wine making facility is at this location, however they also have a tasting room in Governors Park in the historic Capitol Hill neighborhood of Denver, another one in Breckenridge and in 2021 they purchased the Garfield Estate winery and K vineyard in Palisade! Andy and I’ve not been to the tasting room in Breckenridge, but we have enjoyed wine at all three other locations. 

At the Governors Park location is excellent, we spent an anniversary evening there doing a wine tasting and came home with a bottle of their Meritage red “State Line” which is a red blend from grapes grown on the state line between Washington and Oregon, harvested then finished in Colorado. They are just getting start in Palisade so as of right now the winery in Littleton is where the magic happens. 

Carboy Winery Littleton is located at 6885 South Santa Fe Drive, 720-531-5252, Littleton@carboywinery.com. They are open Monday – Thursday from 2 – 9 pm, Friday 2-10 pm, Saturday 12 – 10 pm and Sunday 12 – 9 pm. They offer both red and white wine flights for tasting as well as wine by the glass and bottle. Their ‘not from the vine’ selection includes tap beer, dry cider, wine seltzer, a barrel aged Manhattan made with Breckenridge Bourbon, Wine slushy and or frozen sangria slushy (the last two are wonderful during the summer months when we are in the 90 – 100 degree heat!)

As of right now their wines are made with California, Washington, and Colorado grapes although according to their mission statement their goal (mission) is to craft world-class Colorado wine, cultivate a community with every experience, and create a culture for wine in the centennial state – sounds like my kind of winery! 

In addition to lovely wine, they do offer a selection of foods including cheese, meat, and veggie boards in a variety of combinations. They offer a selection of snacks ranging from pesto deviled eggs, French onion soup, smoked salmon dip (always a favorite), baked goad cheese, burrata (another favorite) and much more. Their bruschetta comes in some interesting combos of which I am looking forward to trying in the future, including the goat cheese, pear and crispy pancetta, the whipped ricotta, black truffle and honey and the bacon jam, roasted dates, and pecorino cheese. One of the things I like to do when enjoying these tasty nibbles is try and figure out how I can recreate them at home! They also offer small sweets of which I always try and stay clear of… my philosophy is I will drink my dessert thank you very much… that said I did try a wee bit of the dessert board that they ordered! 

All in all, it was a delightful evening with our friends, one I hope to recreate again in the future, perhaps in Palisade… I told them this was our chance to pique their curiosity about Palisade and what the Colorado wine country has to offer without having to go over the ‘hill’, not yet anyway!
